Ingredients:
- 6 eggs
- 6 slices of bacon, diced
- 1 cup fresh spinach leaves
- 1 cup sliced mushrooms (button or cremini work well)
- 1 small onion, diced
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove from heat and set aside.
- In the same skillet, add the diced onion and sauté until softened. Add the mushrooms and cook until they release their moisture and start to brown.
- Add the fresh spinach leaves to the skillet and cook until wilted. Season with salt and pepper to taste.
